Marinated Tomatoes and Onions

 


I love tomatoes! I love onions too!  Marinated tomatoes and o are easy to make, and you can use them to compliment many other recipes.

Ingredients:

  • 3 Tomatoes
  • 1/4 cup Diced Onions  
  • 2 tablespoons EVOO
  • 1 tablespoon red wine vinegar
  • Dry Seasonings: salt, garlic powder, onion powder, and parsley
  • 1 container with a well-fitting lid
To Assemble:
  • Slice 3 tomatoes as thin as you prefer.  Place the slices into your container.
  • Chop 1 onion into small pieces.  Sprinkle 1/4 cup of the onion onto the tomato slices. 
  • Drizzle the EVOO and the red wine vinegar on top of the tomato - onion mixture.
  • Season to taste with salt, garlic powder, onion powder, and parsley.
  • Cover the container and place in the refrigerator to marinate for at least 1 hour.
Note: Sometimes I slice the raw onion into rings (instead of chopping it up into small pieces). I marinate the rings with the tomatoes. 




The sliced tomato and onion ring mixture works as a sandwich topping.  Below is a picture of what my daughter likes to call "Marinated Tomato Burger."
