Chicken Bacon Ranch Quesadilla

Chicken Bacon Ranch Quesadillas with Roasted Broccoli and Mac and Cheese 

 

Welcome! In this post, I am sharing an easy recipe for Chicken Bacon Ranch Quesadillas. 

Yesterday, we were at my parents' house for a cookout, and we were given some delicious leftover chicken from the grill. We decided to dice up the chicken and combine it with our own leftovers to create a delicious meal. 




Ingredients for 1 Quesadilla:
  • 1 (6-inch) tortilla
  • 1/4 cup Cooked Chicken
  • 1 slice Cooked Bacon
  • 2 tablespoons Shredded Cheese 
  • 1 tablespoon Ranch Sauce (see below) 




For the Ranch Sauce, mix equal parts Ranch dressing and sour cream. (I usually mix 1/4 cup of each.) 



Instructions:
  • Add chicken, bacon, cheese, and sauce to half of the tortilla. Fold the tortilla in half and cook until golden brown.
  • Cooking option 1: use a skillet with a little melted butter or olive oil to cook the quesadillas. 
  • Cooking option 2: bake the quesadilla in the oven at 375 degrees. Cook for 14 minutes total, turning the quesadilla over after 7 minutes.
