In this post, I am sharing an easy recipe for pizza casserole with cauliflower rice. In the world of healthy eating, finding alternatives to high-carb favorites (such as pizza) can be a challenge. That's where cauliflower rice comes in! One popular way to enjoy this veggie is by creating a pizza casserole. The cauliflower rice simply replaces the pizza dough, and you still get to enjoy your favorite pizza toppings.
Ingredients:
- 2 (10oz) packages of frozen cauliflower rice
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup shredded reduced fat cheddar cheese
- Seasoning (salt, pepper, garlic powder)
- 15 pepperoni slices
- Optional pizza toppings: bell pepper, onion, mushrooms, jalapenos, black olives, and anything else you like!
Instructions:
- Preheat the oven to 350 degrees.
- Prepare an 8 x 8 baking dish
- Quarter the pepperoni slices by cutting them in half (down the center) and half again. Set aside.
- Cook the cauliflower rice according to package directions. Pour the cauliflower rice into the baking dish.
- Stir in seasoning, 1/2 cup mozzarella and 1/2 cup cheddar.
- Stir in the quartered pepperoni.
- Add your pizza toppings.
- Add your final 1/2 cup mozzarella cheese.
- Bake for 20 minutes.
