Pepperoni Wrap

In this post, I am sharing a recipe for a pepperoni wrap.  This wrap is basically a salad wrapped up in a tortilla.  Pepperoni wraps are a delicious cold lunch option for work or school.

Ingredients for 1 Wrap:
  • 1 large flour tortilla
  • 8 - 10  pepperoni slices
  • 1 tablespoon ranch dressing
  • 1 slice of ultra thin provolone cheese
  • 1 handful of leafy greens
  • Optional Veggies: sliced black olives, diced onion, diced bell peppers, sliced grape tomatoes, etc...



Notes about the Ingredients:
  • You can substitute a different type of tortilla if you prefer.  Just make sure it is pliable.  If I am working with a stiff tortilla, I usually microwave it for 10 seconds to soften it.
  • The amount of pepperoni slices depends on how big your tortilla is.
  • If you don't have sliced cheese on hand, substitute 2 tablespoons of shredded cheese.

Instructions:
  • Place one tortilla on a cutting board.  
  • Place 10 pepperoni slices in the center of the wrap.  
  • Add 1 tablespoon of ranch dressing on top of the pepperoni.  
  • Place a slice of cheese on top.  
  • Add the leafy greens and other veggies.  
  • Roll up the tortilla and slice in half.  

Store the wrap in an airtight container.
