Pizza Quesadilla

In this post, I am sharing a recipe for a pizza quesadilla.  Pizza quesadillas combine the flavors of traditional pizza with the portability of the quesadilla.  This homemade creation is perfect for a quick and easy lunch or a kid-friendly dinner!


Ingredients for One Quesadilla:

  • 1 large flour tortilla 
  • Tomato sauce
  • 1/2 cup Cooked ground beef
  • 5 Pepperoni slices
  • 1/4 cup Shredded mozzarella cheese
  • Black olives



Instructions:

  • Start by heating a medium-sized skillet or griddle over medium heat. (You may need a little olive oil or butter to prevent the tortilla from sticking.)
  • Lay one tortilla flat on a plate.  Spread a small amount of tomato sauce over one half.  Add the ground beef, pepperoni, cheese, olives, and any other toppings.
  • Fold the tortilla over and place it in the hot skillet.
  • Cook the quesadilla on one side until it is crispy and golden.  Flip the quesadilla over and cook on the other side.  
  • Slice the quesadilla (if desired) and serve with extra tomato sauce for dipping.




Notes and Substitutions:

  • This recipe is easy to customize.  You can substitute a different type of tortilla, experiment with different cheeses, and add different veggies.
  • If you would like to prepare a large batch of quesadillas, you can do so by baking them in the oven at 375 degrees for 14 minutes (flipping the quesadillas over after 7 minutes).
