Parmesan Meatball Pasta Bowl

In this post, I am sharing a recipe for pasta and meatballs.  This Parmesan Meatball Pasta Bowl is absolutely delicious.  It is easy to make, and it makes a good leftover for your lunch.  There are four parts to this recipe: meatballs, pasta, white sauce, and frozen creamed spinach.

Ingredients:
  • Parmesan Meatballs 
  • 8oz. rotini pasta
  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • 1/2 cups 1% milk
  • 1/4 cup grated Parmesan cheese
  • 1 box (8oz.) frozen creamed spinach

Servings: 4 

Ingredients for Parmesan Meatballs:
(Note: this is the same meatball recipe from Homemade Meatballs with Canned Tomato Sauce.)
  • 1 lb. ground beef
  • 1 egg
  • 1/3 cup Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
Meatball Preparation:
  • Preheat the oven to 375 degrees.  
  • Line a large baking sheet with aluminum foil.  
  • In a medium-sized mixing bowl, mix ground beef, egg, Parmesan cheese, garlic powder, onion powder, and salt.  Shape the mixture into medium-sized meatballs; each meatball should be the size of a golf ball.  Usually, 1lb. of meat yields 18 - 22 meatballs.  
  • Place the meatballs on the baking sheet.  Bake the meatballs for 20 - 25 minutes.  Check the internal temperature of the meatballs to ensure that they reach 160 degrees Fahrenheit.
  • Allow the meatballs to cool down for a few minutes.  Then move the meatballs to a plate lined with paper towels to allow excess grease to drain off if needed.  
  • If you are preparing these meatballs ahead of time, refrigerate them after they have cooled down.
  
Pasta:
  • Cook the pasta according to package directions.  
  • Reserve 1/2 cup pasta water

White Sauce:
  • Using a small pot, melt 2 tablespoons of butter over Medium heat.  
  • Add the flour one tablespoon at a time, and stir with a whisk.
  • Add the milk a little at a time.  Keep stirring until the sauce thickens and bubbles.
  • Add the Parmesan cheese.
  • Season to taste.
  • Add the sauce to the cooked pasta. 

Frozen Creamed Spinach:
  • Microwave the spinach according to package directions.  Stir the spinach into the pasta and white sauce.  You may need to add pasta water to make stirring a little easier.
  • After the spinach has been incorporated, divide the pasta into serving bowls and top with meatballs.

Recipe Tips:
  • The meatballs can be cooked ahead of time and stored in the refrigerator for up to 3 days.  Be sure to place the meatballs in an airtight container after they have cooled down.  You can also purchase precooked meatballs at the grocery store and heat them according to package directions.  
  • The white sauce can be cooked ahead of time and stored in the refrigerator for 3 days.  If the sauce thickens, you can add a small amount of milk to thin its consistency.
