Cheese Soup

In this post, I am sharing a recipe for cheese soup. When it comes to warm and comforting soups, cheese soup is one of the tastiest! The rich creamy texture, combined with various cheeses, make it the perfect meal for a cold, dreary day. If you're a cheese lover like me, grab your whisk and let's get to work!
Ingredients:
- 3 tablespoons butter
- 3 tablespoons all purpose flour
- 2 cups 1% milk
- 1 3/4 cups chicken broth
- 1 1/2 cups freshly shredded reduced fat cheddar cheese
- 3/4 cup freshly shredded mozzarella cheese
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1/8 tsp. garlic powder
Instructions:
- In a large pot, melt the butter oven Medium heat. Add the flour (1 tablespoon at a time) stirring with a whisk.
- Next, add the milk and the chicken broth a little at a time. Continue stirring with a whisk. Once the soup begins to simmer, reduce the heat to Medium Low.
- Add the cheeses. Allow the soup to simmer for 10-15 minutes or until thickened.
- Season the soup with salt, pepper, and garlic powder.
- Divide the soup into 4 bowls.
