Nachos with Cottage Cheese Dip |

In this post, I am sharing an easy recipe for cottage cheese dip. This dip works well with tortilla chips, baked potatoes, vegetables, and just about anything you can think of. This dip is budget-friendly since it only uses two ingredients: cottage cheese and cheddar cheese.
Ingredients:
- 1 cup 4% cottage cheese
- 1/3 cup reduced fat cheddar cheese
- Optional seasonings: salt, pepper, or a seasoning blend
Stovetop Instructions:
- Place 1 cup of cottage cheese in a small saucepan.
- Warm cheese over Medium heat.
- Using an immersion blender, blend the cottage cheese until no longer lumpy.
- Add the cheddar cheese.
- Stir mixture until cheeses are blended.
If you don't have an immersion blender, you can make this dip in the microwave. It tastes just as good.
Microwave Instructions:
- Combine both cheeses in a microwave-safe bowl.
- Microwave mixture for 20 seconds.
- Stir dip.
- Continue to microwave mixture for 15 second intervals until dip is warm and cheeses are blended.
Variations:
- You can use full fat versions of the cheeses for a richer, creamier dip, OR use fat free (or low fat) cheeses for a thinner dip.
