Chicken Salad with Cottage Cheese

In this post, I am sharing a recipe for chicken salad made with cottage cheese.  This recipe only takes a few ingredients - and a few minutes - to prepare!  This recipe also works as a cold school lunch or a cold work lunch.  Let's get started!

Chicken Salad with Cottage Cheese

Serves: 4

Ingredients:

  • 2 cups cooked shredded chicken
  • 1/2 cup 4% cottage cheese
  • Optional seasonings: salt and pepper
  • Optional toppings: pickles, tomatoes, and bacon

Instructions:

  • Mix the chicken and cottage cheese in a bowl. Choose a bowl that holds at least 3 cups, and make sure that your bowl has a well-fitting lid. 
  • After the chicken is mixed, cover the bowl and chill the mixture in the refrigerator for 1 hour.

How to Use This Chicken Salad:

  • Chicken Salad Sandwich: Toast 2 slices of bread and spread 1/4 of your chicken salad on one piece of bread.  Top with the second slice of bread.
  • Chicken Salad with Crackers: Portion 1/4 of the chicken salad into a serving bowl and serve with crackers.  
  • Chicken Salad Stuffed Tomatoes



Chicken Salad Sandwich

 How to pack chicken salad as a cold work / school lunch:
  • If I am sending this chicken salad as a school lunch, I prepare a wrap or sandwich ahead of time.
  • However, if the bread gets a little soggy, another option is toasting the bread in the morning and packing it separately in a storage bag.  When it is lunch time, you can add cold chicken salad to your toasted bread.  This method works for someone with a longer lunch break.
