Easy Ground Beef Tacos



Hello everyone! We eat a lot of crunchy tacos for dinner because they are easy to make and quite delicious.  These tacos are baked in an 8" x 8" glass baking dish with a piece of aluminum foil to prevent sticking.

Below, I am listing the ingredients that I used for this meal.  However, feel free to omit anything you don't like.

Ingredients:
  • 1 lb. of ground beef
  • Taco Seasoning
  • 1 box of crunchy taco shells
  • Shredded cheese
  • Black Olives
  • Hot Sauce
  • Tomato
  • Onion 
  • Shredded lettuce 
  • Sour Cream

Prep Work:
  • Cook the ground beef; drain excess fat; add seasoning and 1/4 cup of water.  
  • Prep your veggies: cut up tomatoes, slice olives, and chop up the onion.

Assemble:
  • Preheat the oven to 400 degrees.
  • Line a glass baking dish with aluminum foil
  • Select how many taco shells you need and fill them with (1) meat, (2) splash of hot sauce, (3) onion, (4) olives, and (5) cheese.  Adding the cheese last helps prevent the onion and olives from falling out of the taco shells.  
  • Bake the tacos for 12 minutes.  Carefully remove the glass dish from the oven and place on a trivet or other safe surface.

(The above photo shows what the tacos look like when they first come out of the oven. I could eat them just like that, but we have a few more toppings to add!)


Add the Garnishes:
  • After the tacos have cooled down, add the sour cream, lettuce, and tomato. 

Notes:
  • I made six crunchy tacos, which is why I used an 8 x 8 baking dish.  If you are making a larger amount of tacos, you would want to use a larger dish or use two dishes that can bake side by side.
  • I try to reduce the amount of fat in this recipe by using the leanest meat that fits my budget.  Also, I use reduced fat sour cream and reduced fat cheese.
  • I grate my own cheese because it melts better than pre-shredded cheese.  However, pre-shredded cheese is more convenient.


The Work Lunch:

I have found that while crunchy tacos are delicious when hot and fresh, they tend to be a bit soggy when reheated as a leftover.  So, in order to turn this into a work lunch, I rework most of the ingredients (listed above) into a different recipe, Grilled Beef and Bean Burritos.
