Grilled Beef and Bean Burritos!

Hello Everyone! These burritos are being packed for my husband's work lunch.  They share many ingredients with the previous night's dinner, Easy Ground Beef Tacos. Just a quick recap - we love crunchy tacos for dinner but not as much as a leftover.  So to create a work lunch, we are gonna make the burritos.

From the previous recipe I am using these ingredients:

  • leftover ground beef
  • shredded cheese
  • black olives
  • hot sauce
  • tomato
  • onion

I am adding these ingredients:

  • sliced jalapenos
  • refried beans (16 oz. can).
  • taco seasoning
  • chicken broth (optional)
  • large flour tortillas (burrito size)
  • extra virgin olive oil
Prep Work:
  • I do a little prep work for the refried beans.  I warm them in a small sauce pan and add a little bit of taco seasoning (about 2 teaspoons) and a splash of chicken broth for flavor.  But of course, you can buy beans that already have seasoning mixed in.
  • I usually microwave my tortillas for about 10 seconds before adding the filling and rolling them up.  I find that microwaving makes them makes them a bit more pliable.
Assemble:
  • Lay one tortilla on a large plate.  Top with 1/4 cup of beans, 1/2 cup of meat (or less, depending on how full the burrito is), hot sauce, cheese, olives, tomato, onion, and sliced jalapenos.
  • Roll up the tortilla burrito-style.
  • Repeat this procedure for any additional burritos.  
  



Preheat a skillet over medium heat with a small amount of olive oil (or other fat).  Use as little oil as possible so that the tortillas are not soggy the next day.  


Let the tortillas cool down on a plate, and then pack them in a lunch container and place them in the refrigerator.
