Salsa Chicken

In this post, I am sharing an easy recipe of salsa chicken in the slower cooker, and I am showing some different things that you can make using salsa chicken.  Salsa chicken is an inexpensive recipe, and there are many different dishes you can create.  From stuffed tacos to stuffed vegetables, there are truly endless possibilities with this simple dish.

But first, let's cook that chicken!

Ingredients:

  • 3 lbs. of thawed chicken breasts 
  • 1 cup of chunky salsa
  • 1 cup of tomato sauce 

Instructions:

Place the raw chicken breasts in the bottom of a slow cooker.  Pour salsa and tomato sauce over the chicken. Set the slow cooker to HIGH for 4 hours.  When the chicken is fully cooked to an internal temperature of 165 degrees, remove the chicken from the slow cooker and place it in a bowl.  Shred the chicken with 2 forks. 

Taste the chicken after it has cooled down and add additional seasonings if needed.

Note: Salsa chicken will last in the refrigerator for 3 - 4 days.  We usually refrigerate half of the chicken and place the other half in a freezer storage bag.  Salsa chicken lasts for 3 months in the freezer.
