Creamy Chicken Penne Pasta

In this post, I am sharing a recipe for Creamy Chicken Penne Pasta.  This recipe has been a big hit with family and friends, and it is easy to make.  The recipe consists of pasta + white sauce + frozen creamed spinach + meat. 

Ingredients:
  • 12oz penne pasta 
  • 3 tablespoons butter
  • 3 tablespoons all purpose flour
  • 2 1/4 cups 1% milk
  • 1/3 cup grated Parmesan cheese 
  • 1 box (8 oz) frozen creamed spinach 
  • 2 cups cooked, shredded chicken

Instructions:
  • In a large pot, cook pasta according to package directions.  Reserve 1 cup of pasta water.  Drain pasta in a colander; set pasta aside.
  • Using the same large pot, melt 3 tablespoons of butter over Medium heat.  Add flour, one tablespoon at a time, stirring with a whisk.  Let the mixture cook for 2 - 3 minutes or until flour is incorporated.  The mixture will be golden and bubbly.
  • Next, add the milk a little at a time and continue to stir the mixture with a whisk.  
  • Next, add the Parmesan cheese.
  • Cook the frozen spinach according to package directions.  Add the spinach to the pot.
  • Add the cooked chicken to the pot.
  • Stir in the cooked pasta.
  • Add the reserved pasta water as needed.  You may not need the entire cup.  The pasta water helps the sauce stick to the pasta, and the pasta water makes the dish easier to stir.  
Serves: 6 

Notes / Variations:
  • Rotini pasta is a good substitute for penne pasta.
  • The 2 cups of chicken can be exchanged for a different meat.  Or, this dish is quite good meatless.
  • This dish reheats well and makes an excellent work lunch.
