Chicken Mashed Potato Bowl

I am sharing a recipe for a Chicken Mashed Potato Bowl.  This delicious recipe requires very little cooking and minimal clean up.  This recipe uses five main ingredients: mashed potatoes, corn, Brussel sprouts, chicken, and gravy.  

Below, I list the ingredients and instructions as to how I make this meal for 3 people.  However, this recipes is super easy to scale up or down, depending on how many people you are feeding.  

Ingredients for 3 Servings:

  • 1 1/2 cups of mashed potatoes - from a (32oz) carton 
  • 1 box (8 oz.) frozen corn
  • 1 bag (10.8 oz) frozen brussel sprouts
  • 12 chicken nuggets (or 3 servings)
  • 1 batch of gravy

Optional Ingredients:

  • shredded cheddar cheese
  • diced onion


Instructions:

1. Cook the chicken nuggets in the oven (according to package directions.)  While the chicken nuggets are baking, the remaining ingredients can be heated in the microwave.

2. Heat the mashed potatoes in the microwave.  When potatoes have cooled down, place 1/2 cup of mashed potatoes in each bowl. 

3. Next, heat the frozen corn in the microwave.   Divide the corn amongst the bowls. 

4. Then microwave the brussel sprouts.  Divide brussel sprouts evenly.

5. After the chicken nuggets are done cooking, chop them up and place them in the bowls.

 


6. Drizzle gravy top of the food.  If desired, sprinkle shredded cheese and diced onion onto the food,


Notes: 
Mashed Potatoes - I purchase refrigerated mashed potatoes for this recipe.  For reference, the 32oz. carton provides 6 (1/2 cup) servings.  I use 3 servings per meal.  
Corn - I usually purchase frozen corn with a butter sauce, but canned corn works too.  Just heat the corn according to the package's instructions. 
Brussel Sprouts - I usually purchase a bag of plain frozen Brussel sprouts, and I roast them ahead of time.  But you can purchase frozen "roasted" vegetables from the freezer aisle.  And of course, you can prepare fresh Brussel sprouts.  If you need a substitution for this veggie, you can substitute a different green vegetable all together.
Chicken - I am using dino nuggets in this recipe, and according to the package, four nuggets is one serving.  I chop up the nuggets after they have cooled down.  To substitute a different meat, you can use shredded chicken, chicken tenderloins, ham, ground beef, meatballs, etc... I have prepared this bowl many different ways, and trust me - they are all delicious. 
Gravy - I make a homemade chicken broth gravy, but you can use a jar of gravy or another preferred gravy recipe.
