Baked Salsa Chicken Taquitos

Welcome!

In this post, I am sharing a recipe for salsa chicken taquitos.  Why make chicken taquitos? Because they are a delicious, easy-to-make dish that can be enjoyed for any meal of the day.  They are baked instead of fried, making them a healthy comfort food.

Ingredients:

  • 10 - 12 corn tortillas
  • 2 cups cooked, shredded chicken
  • 1/2 cup salsa
  • 1 cup reduced fat cheddar cheese
  • Olive oil

Instructions:

  • Preheat the oven to 425 degrees.  Line a large baking sheet with foil.
  • Warm corn tortillas according to package directions.
  • Using a small bowl, mix the chicken, salsa, and cheese.
  • Place 2 heaping tablespoons of chicken in the center of each corn tortilla.  Roll the tortilla up tightly and place on a baking sheet.

  • Brush the outside of the taquitos with olive oil.
  • Bake the taquitos for 15 minutes.

Variations:
  • Instead of chicken, you can substitute a different meat or try beans.
  • Instead of reduced fat cheddar cheese, try Colby, Monterrey, or any other cheese you like.

Reheating Instructions:

  • To reheat taquitos in the oven, preheat the oven to 350 degrees.  Bake the taquitos for 10 minutes.
  • To reheat taquitos in the microwave, place the taquitos on a microwave-safe dish.  Cover the taquitos with a damp paper towel.  Microwave for 1 minute.  If additional time is needed, continue microwaving the taquitos in 30 second intervals.

Enjoy!
