In this post, I am sharing a recipe for salsa chicken taquitos. Why make chicken taquitos? Because they are a delicious, easy-to-make dish that can be enjoyed for any meal of the day. They are baked instead of fried, making them a healthy comfort food.
Ingredients:
- 10 - 12 corn tortillas
- 2 cups cooked, shredded chicken
- 1/2 cup salsa
- 1 cup reduced fat cheddar cheese
- Olive oil
Instructions:
- Preheat the oven to 425 degrees. Line a large baking sheet with foil.
- Warm corn tortillas according to package directions.
- Using a small bowl, mix the chicken, salsa, and cheese.
- Place 2 heaping tablespoons of chicken in the center of each corn tortilla. Roll the tortilla up tightly and place on a baking sheet.
- Brush the outside of the taquitos with olive oil.
- Bake the taquitos for 15 minutes.
Variations:
- Instead of chicken, you can substitute a different meat or try beans.
- Instead of reduced fat cheddar cheese, try Colby, Monterrey, or any other cheese you like.

- Extra salsa
- Bean dip
- Sour Cream / Ranch Dip (Mix equal parts ranch dressing and sour cream)
- Guacamole
- Queso dip
- Homemade Buttermilk Ranch Dressing

- Cheese Soup
- Broccoli Cheese Soup
Reheating Instructions:
- To reheat taquitos in the oven, preheat the oven to 350 degrees. Bake the taquitos for 10 minutes.
- To reheat taquitos in the microwave, place the taquitos on a microwave-safe dish. Cover the taquitos with a damp paper towel. Microwave for 1 minute. If additional time is needed, continue microwaving the taquitos in 30 second intervals.
